I think that your ideas are quite interesting.
Let me help you by adding a couple more:
1) Get the 'fundraisers' a Facebook acount - it will be easier for events and forums
2) talk to "Teatro da Nova". (http://grupoteatrodanova.blogspot.com/) They have a space (level 3 and 4 of the underground parking lot) where their plays are performed. You could ask the Lisbon Players to do a couple of scenes from their newest play giving them some publicity and also money
3) Some of the 3rd year students are already planning a "book fair" and other charity events, maybe if you talk to them you could create a very interesting week in FCSH
4) Regarding your Bake sale, Halloween party (winter party maybe?) and the garage sale I suggest you get involved with the FCSHAE - FCSH students union - they might help you with the logistics and bureaucracy involved (which I can assure you it has plenty of).

I agree with L.M., Facebook makes everything a whole lot easier... it would also be a great way to let more people know about it since the facebook community is so vast.
'Beauty Pageant' will be nice, ppl like this kind of thinks.
